We use organic virgin coconut oil for the luxurious taste and mouth feel it gives our Tarts, Cups & Bites. Coconut oil also melts at 76 degrees so when our products begin to reach room temperature, they literally melt-in-your-mouth. We think that melt-in-your-mouth experience is why our products taste so amazing. Coconut oil is also known for its beneficial medium chain fats and is used frequently by athletes and Paleo enthusiasts as an energizing fuel for the body. Coconut oil is also known to be anti-microbial and anti-bacterial.
A Medium Chain Triglyceride (fat) is rapidly absorbed by the body and is quickly metabolized (burned) as fuel, unlike long chain fats. The result of this accelerated metabolic conversion is that instead of being stored as fat, the calories contained in MCTs are very efficiently converted into fuel for immediate use by organs and muscles.
We need fats to be healthy and strong. Plant based fats like those found in nuts, seeds and coconut oil, contain fatty acids that make up our cell membranes, help with brain function, are necessary for the absorption of fat soluble vitamins (including A, C , E, D & K) and for the production of energy and hormones.

Seed oils can be considered unhealthy when consumed in excessive amounts due to their high content of omega-6 fatty acids. While omega-6 fatty acids are essential for our body, consuming them in excess can lead to an imbalance in the ratio of omega-6 to omega-3 fatty acids in our diet. This imbalance has been linked to inflammation, which is associated with various chronic diseases such as heart disease, obesity, and certain types of cancer.
Additionally, some seed oils undergo extensive processing and refining, which can result in the production of harmful compounds such as trans fats and oxidation byproducts. These compounds can have negative effects on our health. Many snack companies use these lower quality oils in the production of their products.
Some studies suggest that emulsifiers may contribute to increased intestinal permeability or "leaky gut." This condition involves a compromised intestinal barrier, allowing substances to pass through the gut lining and potentially trigger inflammation or immune responses.
It's important to note that the studies on emulsifiers are still ongoing, and their direct impact on human health is not fully understood. This is precisely why we avoid using them.
Additionally, emulsifiers aid in processing to help molecules like water and oil combine and stay suspended (without breaking). Since Hail Merry will not use emulsifiers, our products will vary from batch to batch. While the mouthfeel is always luxurious and creamy, the ganache in our Cups & Tarts for instance can have varying textures. Natural products are less forgiving than chemically treated ingredients. We think this slight variance is way better than sacrificing your health! We appreciate all feedback as we continue to learn and push the boundaries of food science!
Dietary gums can cause digestive issues in some individuals. They are classified as soluble fibers and can have a laxative effect, leading to bloating, gas, and diarrhea when consumed by people with sensitive digestive systems.
Furthermore, certain studies suggest that some individuals may be sensitive or allergic to specific dietary gums, such as carrageenan, which can cause inflammation in the gut and potentially contribute to gastrointestinal symptoms.
Additionally, gums are used to help thicken sauces and creams (like ice cream). Since Hail Merry will not use gums, our products will vary from batch to batch. As a nutrition-focused consumer, it's important to be aware of the potential risks and alternatives available, such as natural sweeteners like organic maple syrup.Sugar alcohols, such as erythritol, are commonly used in sugar-free and low-carb products as a way to replace sugar without the calories. They are also naturally occurring in some fruits and vegetables. While they don't raise blood sugar levels as dramatically as sugar does, they can still cause digestive discomfort such as bloating, gas, and diarrhea. In some cases, too much consumption of erythritol can cause nausea, headache, and dizziness. Find out more.
